Last Minute X O - Valentine's Day Cookies

Happy Valentine's Day! I love Valentine's day because its a good excuse to share the love. :) and it's a good excuse for my husband to get me a present.. ok maybe not something expensive but something to show me that he cares. How do I show my husband how special he is? mind out of the gutter people.. I bake him a big pile of full fat, full of carbs, full of yumminess cookies. thats real love right?

Heart Sugar Cookies! (Recipe courtesy of Martha Stewart- with a few tweaks)

Cookie Ingredients
2 cups sifted flour
1/2 tsp of baking soda
1/4 tsp of salt
1 stick of butter- room temperature
1 cup sugar
1 large egg
1 tsp of vanilla extract

Combine the dry ingredients in a bowl (the flour, baking soda, and salt). Cream the butter and sugar in the mixer until they combine, then add egg and vanilla.   Put the mixer on low and start adding the dry ingredients slowly. It should be doughy at this point and scrap it out of the bowl and divide into two and wrap in plastic.  Put in the freezer for 20 minutes. Preheat the oven to 350 degrees.  Spread a little flour onto the work surface and roll out the dough. (it might take a few minutes for the dough to loosen up a little bit since it was in the freezer.. brrr!) Roll out the dough and try to get it thin if you want those perfect heart shapes. Cut out the dough with your cookie cutter and then pop them in the freezer for 10 minutes.  I made a couple of bird shaped ones too because Nora's new favorite word is "bird".  Remove from freezer and pop them in the oven for 7 minutes and then rotate the trays after 7 minutes and give them another 7 minutes.   Place on cooling rack and then it's time to frost.
Buttercream Recipe
 3 cups confectioner's sugar
2 sticks of butter
1/4 tsp of salt
1 tablespoon of vanilla
3-4 tablespoons of milk
food coloring- i used blue since it's Tim's favorite color.

Mix together sugar and butter until they are well incorporated and fluffy. Add salt and vanilla and then slowly add the milk depending on the consistency you like your frosting.  Then take out ziplock bag and place it into a coffee cup and then put 1/3 of the icing (doesn't have to be too exact) into the bag. The frosting that stills in the mixer add your food coloring.  Frost your cookies. Now snip the corner off one end of the ziplock bag and make your X's and O's- the sloppier the better. These are home made cookies after all. :)

Tim is going to be too excited for these cookies.  Well maybe I'm a little excited to eat them to!

I had a heart-shaped sugar cookie this morning for breakfast, haha. Our annual Vday tradition is to have fondue at home, and I can't think of anything better than melted cheese, honestly. Right up our alley :) Have a happy Valentine's Day Erika!! xo

Yum!!!! MIght have to try that recipe out! I went for the shop bought version, we have a really nice bakery 10 mins away from our house, and the treats went down too quick! :-)
