Pumpkin Pancake Recipe with Oxo Tot


It is no joke that Everett is a very picky eater and he doesn't like to get his hands dirty. He is only one and has a very strong opinion about what he likes and what he doesn't. He is pretty much the exact opposite of his big sister Nora. Nora loves to get messy and just dives right in for every meal. Everett on the other hand is a challenge and looks at his food carefully.  If it's a new food, he puts out one finger out and touches the food. Picky! or maybe I should say cautious. 

Oxo Tot sent me a care package with all of the essential gear needed for the picky and non picky baby and toddler. Seriously.. since Everett is such a picky eater, this is exactly what the doctor ordered. I decided to make a special batch of pumpkin pancakes which even the pickiest eater can not refuse. 


Perch Boosted Seat with Straps // Divided Plate with Removable Ring // Fork and Spoon Set
Ingredients:
1/2 cup of Pumpkin Puree
1 teaspoon of vanilla
1 cup milk
1 egg
1 cup flour
1 tablespoon of baking powder
1 teaspoon of cinnamon 
1/4 teaspoon of salt

Directions:
I could tell you to combine the wet and then add the dry but if you are a busy mom like me. Combine in a bowl and lightly stir with the fork.  Heat pan and melt a little butter or non stick spray. Spoon a a dollop in pan and wait till you can see those little bubbles form in the batter- then flip. Continue to make pancakes and drown in maple syrup and butter. and enjoy! They are delicious and fluffy. The best part is your kitchen smells incredible. Total Bonus.

Since Everett is so picky he does better when the food isn't touching and he dived right in (which is rare), but who can really refuse a pumpkin pancake?
